Freeze-dried berries and herbs

Berries and herbs are a more difficult object for freeze drying due to the geometry, which complicates the supply of heat to the object being dried by the contact method, and the high content of sugars and acids in berries.
Infra-red heating is often used to lyophilize herbs and flowers.
